Garda Trentino expresses a unique food and wine identity, where Alpine culture meets the climate of Lake Garda. To enhance this heritage, we work in a structured way together with producers, restaurateurs and institutions, transforming taste into a shared territorial project.

A territory rich in flavours and identity

Garda Trentino is a land of taste where intensity, variety and authenticity coexist.

It is a mountain territory overlooking Lake Garda and, precisely because of this combination, it expresses an authentic and recognizable cuisine: traditional dishes such as carne salada, strangolapreti, bigoi and canederli, alongside high-quality agricultural products, extra virgin olive oils, wines, grappas and local craft beers.

Some flavours are bold, others more delicate, but all are deeply connected to seasonality and to the work of the people who live in and cultivate this territory. A heritage that reaches its fullest expression when it is told, tasted and shared in the right context.

WHY WE INVEST IN FOOD & WINE

From taste to vision

For this reason, and in line with the Eat Healthy pillar of our destination positioning, we decided from the very beginning to work in a structured way on the food & wine sector.

We do this through a dedicated working group bringing together producers, restaurateurs, associations and organizations directly involved in these projects, such as ATA Garda Trentino, Trentino Marketing and Strada del Vino e dei Sapori.

A space for discussion and planning that allows us to coordinate initiatives, strengthen the quality of the offer and transform individual excellences into destination products, which you can discover on this page.

Olive oil as a story of our destination

Created in 2021, Frantoi Aperti is one of the flagship projects of our work in the food & wine sector.

The initiative is the result of a shared process involving olive growers and olive mills, launched with the aim of creating a structured offer linked to extra virgin olive oil that goes beyond a single event.

Held every year at the beginning of November, Frantoi Aperti has become the moment of greatest visibility for this work: an event that opens the doors of local olive mills, enhances the product and strengthens the connection between landscape, production and local culture.

A showcase of quality events

Mese del Gusto was created with a clear objective: to coordinate and enhance the main autumn food & wine initiatives across the territory, creating a recognizable and coherent umbrella project.

The initiative connects associations, producers, restaurateurs and event organizers, offering shared visibility, communication tools and promotional support.

Alongside the events, Mese del Gusto also actively involves restaurants through the creation of the Menu del Gusto: seasonal themed menus that allow participating restaurants to highlight the featured products of the festival and keep them on the table beyond the event itself, strengthening the relationship between territory, cuisine and guest experience.

Together with the organizers, we also worked on the creation of dedicated Garda Trentino Experiences, designed to extend events over time, increase visitors’ length of stay and generate value beyond the event days.

Today, Mese del Gusto is an integrated and widespread program that strengthens Garda Trentino’s identity through its flavours and creates new growth opportunities for those working in the sector.

Tools to tell the story of the taste

 Carta dell’Olio del Garda Trentino is a tool designed to enhance and promote knowledge about Garda Trentino PDO extra virgin olive oil.

It is not a restaurant menu, but rather a guide created for restaurateurs and operators, helping them select, explain and present olive oil in a more conscious and informed way.

It includes tasting guidelines and tutorials to recognize aromas, flavours and sensory characteristics, transforming tasting into a cultural as well as gastronomic experience.

MateriaPrima 
Tools to tell the story of the taste

MateriaPrima is the handbook of local flavour.

An operational tool designed to support restaurateurs and dining room staff in enhancing Garda Trentino’s agri-food products, providing useful information, storytelling and curiosities to share with guests around the table.

The goal is to bring sustainability onto the plate, starting from knowledge of raw ingredients and their connection to the territory.

MateriaPrima was previewed during the 2026 edition of Hospitality – Il Salone dell’Accoglienza (February 2–5). 

A CERTIFICATION OF QUALITY

The intermunicipal De.Co. label

As a Tourism Board, we play a coordinating role together with the municipalities of Garda Trentino and Valle di Ledro in the assignment of the De.Co. – Denominazione Comunale label in its intermunicipal form.

De.Co. is a nationally recognized certification of geographical origin aimed at:

Preserving products linked to local traditions and popular culture over time;
Protecting traditions, knowledge and local heritage;
Enhancing the flavours that identify the territory.

Currently, Garda Trentino De.Co. products include carne salada, Marroni di Campi and their chestnut purée, Dro plums and Drena chestnuts.

THEMATIC TRAILS
Walking through local products

Thematic trails are one of the tools we use to transform products into territorial experiences. Not simple hiking routes, but narrative itineraries that combine landscape, agriculture, culture and identity, making flavour accessible even beyond the table.

THE OLIVE TRAIL
Product, territory and identity

Together with ATA Garda Trentino, we launched a shared design process focused on thematic food trails, conceived as permanent tools for knowledge and territorial enhancement, accessible all year round and capable of connecting product, landscape and community.

The first project developed was the Olive Trail, which crosses the olive groves of Arco along a route of about 7 km, also featuring shorter variations.

Along the trail, installations and interactive panels tell the story of Garda olive cultivation, production techniques and the cultural value of extra virgin olive oil, guiding visitors through an immersive experience among centuries-old olive trees and open views over the lake.

Building on this experience, we are now working — again together with ATA — on the development of the Nosiola Trail, a project dedicated to Trentino’s only native white grape variety and its symbolic products: Nosiola wine, Vino Santo and grappa.

THE WALNUT TRAIL
A shared project to enhance flavour, landscape and community

The Walnut Trail enhances the Bleggio Walnut, a Slow Food presidium, through a route of approximately 9 km crossing rural landscapes and historic villages, at the heart of the cultivation area of the native Bleggiana variety.

Along the route, illustrated panels guide visitors through a story intertwining rural history, landscape and food culture.

The project is the result of a shared effort between APT Garda Dolomiti, the Municipality of Bleggio Superiore, the Ecomuseum of Judicaria and local associations, with operational support from the Garda Rangers, who took care of signage and infrastructure.

FROM STRATEGY TO CONCRETE ACTIONS

Strengthening wine tourism

Alongside ATA’s work on the development of a new hospitality concept for Valle dei Laghi — and within the broader strategy aimed at positioning Trentino as a Wine Destination — we are working to strengthen Garda Trentino’s wine tourism offer in a structured way.

The objective is twofold: on one side, to increasingly enhance wine-related events as moments of storytelling and connection with the territory; on the other, to support wineries in a growth path leading them to develop high-quality Garda Trentino Experiences capable of expressing identity, authenticity and professionalism.

In this process, we support wineries not only from a promotional and commercial perspective, but also through training and knowledge exchange, encouraging greater awareness of their role within the destination.

This work also includes study visits and concrete opportunities for dialogue with destinations that have already developed advanced and sustainable wine tourism models.

Promoting flavour, enhancing local partners

Vacanze con Gusto is the project through which we give visibility to premium partners who choose to embark with us on a quality journey connected to food and wine.

It brings together restaurateurs, producers, agri-food shops and agriturismi that promote a sustainable economy based on local identity, seasonality and respect for traditions.

To join the project, businesses sign a set of guidelines that guarantee quality, consistency and authenticity. The goal is to expand the local gastronomic offer, enhance typical products and provide guests and residents with a genuine, recognizable and shared taste experience.
